These Almond Oat Energy Bites are the ultimate healthy snack for when you want something sweet – they’re made from good-for-you ingredients, but still taste like a treat. And yes, there is chocolate involved. They are easy to make and store in the refrigerator for up to a week. Let me know how yours come out!
Blend together the rolled oats, hempseed, flaxseed, shredded coconut, and cinnamon until finely ground (should be about 30 seconds). In a medium bowl mix the almond butter and maple syrup. Add the dry ingredients from the blender to the wet ingredients and the chocolate chips and mix everything together. Place the bowl in the refrigerator for 5-10 minutes. Roll the dough into balls. Enjoy immediately or store in the refrigerator.
Blend dry ingredients until finely ground (30 seconds – 1 minute)
Mix wet ingredients.
Mix dry ingredients with wet and mix in chocolate chips.
Refrigerate bowl for 5-10 minutes so the dough is not as sticky.
Use a 1 1/2 tablespoon, cookie scoop, or spoon to scoop out even amounts of dough. Use your hands to roll the dough into balls – the balls may appear soft at first, but will firm up once refrigerated.
Enjoy immediately, or store in an airtight container the fridge for up to 7 days.
Notes
I recommend using mini chips for this recipe, as they distribute throughout the batter more evenly. You can also finely chop a chocolate bar and use that instead! I prefer dark chocolate or even carob bits if you are trying to avoid the caffeine that is in chocolate.
