Almond Date Energy Balls

These energy balls are a healthy way to get your sweet fix and are made from 100% whole foods (meaning unrefined and unprocessed). They not only taste great, but will provide you with tons of healing nutrients including plant-based protein, omega-3s, essential vitamins, minerals, and powerful antioxidants. The spices have numerous healing properties that will increase your digestion, reduce inflammation, and promote lightness in your body.

The main ingredients, almonds and dates, are highly revered in Ayurveda as they are tissue building foods. Almonds and dates, along with ghee, are especially beneficial ingredients to have during your period or menstrual phase, during pregnancy and post-partum, or for a light or irregular period.

Ingredients

8 Medjool dates, pitted

1 cup whole, raw almonds

1/2 teaspoon ground ginger

1/4 teaspoon ground cardamom

pinch of pink salt

1/2 Tablespoon ghee

optional coconut flakes

  1. Soak the dates in warm water for 5 minutes.
  2. Add almonds, ginger, cardamom, and salt to a food processor and blend until well ground. Don’t over process so much that it turns to a flour or a paste, but enough that it has a finely ground consistency.
  3. Add the dates and ghee to the food processor and pulse until dates break up and all ingredients are well combined. Make sure not to over process to a paste.
  4. Remove mixture from blender and roll into smooth balls. Option to roll each ball in coconut flakes. Refrigerate balls before serving. Makes about 12 balls.
